Quick, Easy and Healthy Grilled Chicken Recipes

Healthy grilled chicken recipes should be quick and easy, right? Like me, you are probably way too busy to spend hours cooking healthy. That is why I built this site! It is Healthy made Simple. With my crazy schedule, my healthy meals can’t be any other way. Poultry, especially the white meat, is low in fat and a good source of protein. As long as you don’t bread it and fry it, you can make lots of healthy meals with poultry.

Baking tends to dry out poultry, which is one of the reasons that grilling has become popular. Just be careful not to overcook the outside.

If you are grilling with gas, use low heat. It takes a little longer to cook on low but the meat stays juicy instead of getting dried out. When grilling with charcoal, wait until the coals are gray and flames are only visible occasionally.

Remember that a recipe can only estimate the amount of time it will take to cook the poultry. If you don’t have a meat thermometer for your healthy grilled chicken recipes, it is worth your while to invest in one. It is much easier and more accurate than other methodson your preheated grill. Cook until done according to your meat thermometer, usually 20-30 minutes, but thicker breasts require a longer cooking time. You can also reserve some of the sauce to use for basting during the last few minutes of cooking.

Honey Mustard

Ingredients:

  • 4 boneless, skinless breasts
  • 1/3 cup mustard
  • ¼ cup honey
  • 2 tablespoons olive oil

Mix the last three ingredients together in a bowl until smooth and evenly mixed. Dip each breast in the sauce and then place on your preheated grill. Cook until done according to your meat thermometer, usually 20-30 minutes, but thicker breasts require a longer cooking time. You can also reserve some of the sauce to use for basting during the last few minutes of cooking.

Healthy Dip Recipes

There are numerous quick and easy chicken recipes calling for teriyaki. This one has turned out well for me in the past. The poultry goes well with brown rice, string beans, pineapple slices and water chestnuts.

Ingredients:

  • 4 boneless skinless breasts
  • 1 cup teriyaki sauce (you can use more if you like)
  • 2 teaspoons minced garlic (garlic powder works in a pinch, use about a teaspoon unless you really like garlic)
  • ¼ cup lime or lemon juice
  • 2 tablespoons grape seed, olive or sesame oil

The directions are basically the same as those for the honey mustard. But you can marinate the poultry overnight if you like. The meat retains more of the teriyaki flavor after soaking in it overnight.

Just put all of the ingredients in a large plastic bag. Seal the bag and shake it around a bit to mix the ingredients and to coat the breasts. Place the bag in the fridge and turn it occasionally if you have time. Turning helps to evenly coat all of the pieces.
