Sizzlin’ Sunshine Breakfast Burrito

Capsicum Spice

  • olive oil cooking spray
  • 3 egg whites and 1 whole egg
  • 1 ½ tsp.FF or reduced fat cheddar
  • 1 ½ tbsp. of drained black beans
  • 1 ½ tsp. salsa
  • 1-1/2 tsp. diced fresh jalapeno pepper
  • 1 -8 in. whole-wheat tortilla
  • optional extra salsa
  • optional 2-3 slices of avocado (good healthy fat)

Lightly spray olive oil in a non-stick heated skillet. Add eggs and jalapeno peppers to skillet and scramble. Place the scrambled eggs down the center of the whole-wheat tortilla. Top with black beans, cheddar cheese, avocado and salsa. Roll tortilla into a wrap and place it on a microwavable plate in the microwave for 20-30 seconds. Top off with another tablespoon of salsa if desired. Enjoy this with a hot cup of green tea for that extra thermo burn.
